What's for dinner tonight?

So ok, I forgot to post pics of my last dinner meal. Usually when I'm in the kitchen, I'm trying to hurry because I am feeding a pack of animals-or men, whatever...or I'm trying to shoo a busy toddler out from underneath my feet who is trying to grab everything off the counter. Sometimes he helps me, but not always. Maybe I will remember tonight. It's super exciting stuff, I tell ya.

Now, onto tonight's meal...

Baked Tilapia - I think I'm going to use my breadcrumb/parmesan mixture to coat it in before putting it in the oven.

Steamed asparagus and carrots

I usually just boil vegetables, or saute them. However, as I was researching recipes online today, I remembered that I have an actual steamer that I have never used. There is no better time than the present. We'll see if the veggies are edible when I am finished.

One other tid bit: Parsley, Basil and Curry are my now 3 favorite seasonings. I put them on/in a lot of things and I have to say, it always makes dishes more yummy!

Have you ever tried panko breadcrumbs? They give you crispier crust when you bake. I usually coat my fish and then spray it with a little cooking spray to "faux" fry it. I also love my asparagus roasted in the oven. I've never tried steaming so you'll have to tell me how it goes. Enjoy your meal!

10 years ago if someone had asked me if you would ever post on a blog about your dinner and a curve towards healthier meals, I would have thought that they were talking about someone else. SO proud of you my sweet friend!
